做法:春笋切成片后加少许盐(yán )捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩(yǎn )住(zhù )春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
