做法:春(chūn )笋切(qiē )成片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收(shōu )汁时(shí )盖上锅盖焖(mèn )。
