做法(fǎ ):春笋(sǔn )切成片后加少许盐捞出后(hòu )用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
