做法:春笋切成(chéng )片后加少许盐捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀(yún )稍收汁(zhī )时盖上(shàng )锅盖焖。
