做法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖(gài )上(shàng )锅盖(gài )焖。
