做(zuò )法:春(chūn )笋切成片后加(jiā )少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
