做法:春笋切(qiē )成片(piàn )后加少许盐捞(lāo )出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后(hòu )转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
