做法:春笋切成(chéng )片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清(qīng )水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收(shōu )汁时盖上(shàng )锅盖(gài )焖(mèn )。
