做法:春笋切(qiē )成片(piàn )后加少许盐捞(lāo )出后用清(qīng )水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
