做(zuò )法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清(qīng )水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
